The young maker is something of an atavist: hand picking tea in a time when it is prohibitively impractical, and insisting on using a fifty-year-old wooden roller for the character it inspires in his tea. Last spring the moment came when he told us, of all his lots, he’s proudest of his sencha. We’ve carried his kabusecha for years, but had never sourced the sun-grown, steamed tea.
