Yellow Tea 黄茶

Yellow tea occupies a spectral sliver between green and white teas--its elusive nature mirrored in its soft and subtle character. Often mistaken for a green tea at first glance, its distinguishing feature is a gentle, post-fixation "heaping" process called menhuang (闷黄), which piles hot and moist leaves upon each other, encouraging non-enzymatic oxidation and literally yellowing green leaves slightly, mellowing grassy edges and drawing out a soft, penetrating sweetness. It is a category on the verge of disappearance: rarely produced, hardly exported, and criminally under appreciated. For producers, there are no casual yellow teas; making one requires a level of care that borders on devotion. The processing is delicate and done with the senses producing a cup of soft smoothness, subtle fruitiness, a rounded body, and a lingering fragrance like steamed orchid and warm hay. The opportunity cost of making such a difficult yet obscure category means that yellow tea may not survive or thrive as a category in the future.

This tea from Mt. Yunpan deserves a category all of its own. What has been called “yellow” in recent productions of the Yunnan diaspora is actually, not quite. If anything, it is an extremely light oxidation black tea process. Undergoing ever-brief solar withering, gentle rolling to coax flavor, then, while still less than a fifth along the total oxidative spectrum, halted by baking before being dried. The russet and grey-green tones offset by lustrous yellows of the buds and browns and blacks of the leaves make for a lovely, commendable cup with light-medium body and plush mouthfeel.

The signature process that evokes yellow tea’s scent, menghuang, is not exclusive to Anhui. As a matter of fact, Ms. Shu and her team in Sichuan embrace the challenge of heaping and covering freshly cooked tea leaves, allowing them to stew in their own juices and moisture. This Yellow Bud is picked only from tender buds before the Qingming holiday. The non-enzymatic oxidation induced by menghuang inspires chestnut and toasty tones, while dimming tannic astringency. Labor intensive, with relatively little demand, Ms. Shu is dedicated to this heritage style. Perhaps a tonal shift for a Qingmian production, this Yellow Bud is sessionable and soothing nonetheless.
